BIRTHDAYS NEED CAKE – DONT THEY?

Warning: Granny post……………with a bit of cake included!

Some of you may have followed the journey of my cute grandson Jay over on my original food24 blog so this is for you, and for those others who are interested of course. I’m a grandmother after all….and grandmother’s like to brag a lot sometimes!

Last Sunday this little guy turned 3 years old. I can’t believe it….although he is such a big fellow and so advanced that they asked to check his birth records when he started pre-school in January…he wears size 5 clothes and shoes and he has a large personality to match. What you see is what you get with Mr Jay…and such a happy boy.  

For his birthday I used my very easy hot oil and milk vanilla sponge recipe.

Instead of my usual 3 round layers I used a couple of loaf tins to make coaches and a couple of empty condensed milk cans for an engine and turned it all into a train cake.

Jay’s older brother Ty insisted that there had to be a pond with frogs around it as he found a packet of jelly frogs while we were hunting for accessories and decorations in the grocery store.

 

Jay loved his cake so much that we had to light the candles and sparkler TWICE!! A perfect candidate for those magic candles that cannot blow out I would say………I can just imagine his surprise and glee when they keep lighting up again.

I mean, just look at the delight on that little face…….the hours of work were SO worth it………

 

For those who don’t know the story about  Jay – he was born with congenital cataracts in both eyes, plus an overlying condition called Nystagmus where the eyes have rhythmic and involuntary movements – sometimes worse than others. He  underwent 4 eye operations last year to try and correct part of his problems. He has had to have both lenses with cataracts attached removed and he now is sporting plastic intra-ocular lenses. He is doing well and goes in for a check up again in April. We don’t know quite how much he does see but we know he sees quite a lot. He still stands up close and personal to watch tv and his books he holds about an inch from his nose when he “reads” I think distance vision is better than we think but the close up is not so good…but I could be wrong. He is very afraid to go out near the road and even though holding a hand he gets panicky when he hears cars approaching. Not a bad thing I guess.
