I WON THE CLEMENGOLD RECIPE CHALLENGE

Just a quick post to let you all know that my entry was chosen as the winning entry in the Woolworths Clemengold Recipe Challenge.

 Thank you Woolworths, Taste magazine and ClemenGold for the opportunity to enter this exciting recipe challenge and a massive thank you to all those who thought my entry was worthy of winning. I am so chuffed and really looking forward to spending my voucher. Holding thumbs for all the commenters as the winning comment will be chosen tomorrow!!

So one last time……here is my winning entry:

 

WARM ASIAN SALAD OF PRAWNS, CLEMENGOLD & HOKKIEN NOODLES

Serves 4 

Time: 20 minutes 

Ingredients: 

  • ·        Peanut oil for frying – about 30ml
  • ·        400g Woolworths Hokkien Stir Fry Noodles
  • ·        300g Ready Cooked Woolworths Garlic & Chilli Prawns
  • ·        1 400g Bag Woolworths Ready to Wok Fine Julienne Stir-fry
  • ·        5ml Woolworths Grated Ginger
  • ·        2-5ml Woolworths minced Green Chilli
  • ·        90g Sugar Snap Peas – washed and cut into halves
  • ·        90g Fine Beans – washed and cut into halves
  • ·        100g Baby Corn – cut into ¼’s
  • ·        ½ Bag (55g) Baby Spinach, washed & dried and roughly chopped
  • ·        Few Enoki or Shimeji Mushrooms left whole
  • ·        4 Woolworths Clemengold – peeled and cut into segments (no pith)
  • ·        90g Butter Toasted Vanilla Cashew nuts
  • ·        Few pomegranate jewels for garnishing
  • ·        Chopped coriander for garnishing
  • ·        Sprinkling of Black Sesame Seeds for garnishing
  • ·        20g Salad (Spring) Onions – sliced on the diagonal for garnishing 

Dressing:

  • 50ml Clemengold Juice
  • 10ml Verlaque Pomegranate Concentrate
  • 10 ml Hoisin Sauce
  • 10ml Sriracha Hot Chilli Sauce
  • 5ml Runny Honey
  • 2ml Maldon Salt Flakes
  • Grinding of Black Peppercorns
  • 2ml Woolworths minced Garlic
  • 2ml Woolworths grated Ginger

Method:

  1. Prick the packets of noodles, place into a microwaveable bowl and microwave on 100% power for 1-2 minutes then set aside
  2. To make the dressing place all the ingredients into a screw top bottle and shake well then set aside till needed
  3. Pour the oil into a wok, heat up over high heat then add the bag of julienne stir fry veg, peas, beans & corn and stir fry for 5 minutes
  4. Add the ginger and chilli and shake for a few seconds before adding the cooked prawns, mushrooms, and noodles. Heat through while shaking the wok to mix all ingredients together
  5. Add the spinach and then the Clemengold segments and shake again to toss through
  6. Transfer to a bowl, drizzle with the dressing then garnish with the roughly chopped cashews, pomegranate jewels, chopped coriander, black sesame seeds and spring onions
  7. Serve immediately

SALTED VANILLA SEED CASHEWS

  • ·         100g Cashew Nuts
  • ·         20g Butter
  • ·         Knife tip of Vanilla Seeds
  • ·         1ml Maldon Salt Flakes
  • ·         2,5ml Light Brown Sugar or Honey

Place the cashew nuts into a nonstick frying pan with the butter and vanilla seeds.

Toss over high heat until the butter begins browning and the nuts turn a toasty brown.

Add Maldon Sea Salt flakes and the sugar or honey and continue to shake pan over the heat for a few more seconds. Remove from heat and allow to cool!

Its freezing in Cape Town. The World Cup 2010 is over. Did you feel it? Wasn’t it wonderful? I had a fabulous time shouting for my chosen teams and blowing the vuvu with Ty and Jay. Who remembers when my brownieboy had that dreadful bike accident?? It was a year ago last Thursday!!! Brownieboy, Tyler and I did the fan walk last Saturday and Brownieboy coped so well. He is battling in the cold weather with the metal bits holding him together but otherwise he is doing so so well!
