Today in comments I had a request for flapjacks and the commentator, Phillip, had me drooling over my keyboard just by the way he was describing what he wanted hehe. Here in South Africa we call these delightful things flapjacks, you might call them drop scones, American Pancakes or Scottish Pancakes. Whatever you call them……just make them!! They are so delicious and enjoyed by young and not so young alike :o)

 Here is my recipe for flapjacks. I pimped the original recipe to include some oatbran/pinhead oats to make these fit into my low GI list of things I can eat :o) BTW my kids call me Moo hence the name on some of recipes and many of my older readers call me Moo as well.

Stack of Flapjacks dripping with butter & maple Syrup

Stack o' Flapjacks


Ingredients 225g Self Raising Flour (I replaced 100g with Pinhead Oats to make them Low GI friendly)

¼ tsp grated Nutmeg & Pinch Salt

55g Castor Sugar (I used Xylitol)

1 tbsp clear runny Honey

1 Egg, beaten

300ml Milk

Peanut Oil for frying


1. Place the sifted flour, nutmeg, salt, oats if using and sugar in bowl making a well in the centre.

2. Mix the honey and egg together and pour into the centre of the flour mixture.

3. Add half the milk, beating all together well until smooth. Add the rest of the milk a bit at a time until a thickish dropping consistency is reached.

4. Use a drop or two of oil to lightly grease a heavy based frying pan or griddle and heat until moderately hot.

5. Drop 1 tbsp of the mixture into the pan and cook until bubbles appear on the surface and the underneath is golden brown. Turn over, cook the other side for a further 1-2 minutes.

6. Place between a tea towel or kitchen paper and keep warm. Repeat until all the batter is used.

Serve with butter and golden syrup, maple syrup, honey or cinnamon sugar.. Next time I will pop some fresh blueberries in them….delicious!!! Enjoy your Saturday.

    I love flapjacks…I think they have to be my weakness!

    I love this, I leave out the oat and use chunky cottage cheese…WOW so good! And lots of warm maple syrup!
